Cheese is produced from the curdled milk of cows, goats, and other mammals using rennet (an enzyme) and acidification. Although most people will throw out their curdled expired milk, bacteria and molds play an important role in making the different styles and flavors of cheese. For example, aged cheese like blue cheese, popular at cocktail parties in the form of cubes with decorative toothpicks sticking out of them, is just a brand of cheese in which mold is introduced to the curd before the molding process. In contrast, Brie and Camembert are soft cheeses, likewise aged. However their interior texture and flavor comes from bacteria that forms a surface mold. All this talk of mold is nauseating to some, but since cheese is a popular food in so many countries and in so many different forms, it's worthwhile to learn why and how the cheeses that decorate your local cheese shop are made.
As far as diet is concerned, cheese is an important dairy product. High in fat but high in enjoyment factor, cheese is an excellent party treat or topping. Melted stringy cheese is ofted enjoyed in dishes like pizza and the British melted cheese favorite, Welsh Rabbit. Among the lesser known cheese delicacies is the Cypriot halloumi melt. Cheese shops have more selection and higher quality cheeses than grocery stores.
