We are all familiar with the sweet, refreshing taste of ice cream, but did you know that there are different forms of this popular treat? Gelato is an Italian variety of ice cream which usually includes the following items:
- liquids- milk or water;
- solids- sugar, fats, or sweeteners;
- flavorings- pastes, fruit powders;
- guar gum;
- locust bean;
- emulsifiers- mono-and diglycerides;
- and air
Gelato can be made by either a hot process, requiring pasteurization, or a cold process which does not require pasteurization. Both of these processes require a Gelato batch freezer. Gelato has typically less than 55% air, which results in a denser and much tastier end-product. Gelato is usually made with fresh fruit, chocolate, nuts, cookies or biscuits.
Gelato is best made fresh on a daily basis. The word Gelato in Italian comes from the word "freeze" or "frozen." Many people tend to have the misconception that Gelato contains gelatin, but this is not so. To enhance the flavor of Gelato, it is often stored in and served from a Gelato freezer, which is not as cold as an ice cream freezer. Gelato's wonderful taste can be partly attributed to its semi-frozen consistency.
